&lt;p>Pijalni started with wine. Dominika Szpakowska opened the first place in Nadodrze — 33 square metres, a few stools, a wine list she put together herself. The idea was simple: good natural wine, no pretension, no snobbery. A place you'd walk into after work and stay three glasses longer than planned. For many people in Wrocław, it was their first encounter with natural wine.&lt;/p>
&lt;p>After two years it got too small. Wine needed food, and guests were asking for more than a cheese board.  &lt;p>He trained in Barcelona's top restaurants. In Wrocław, he built his reputation as Chef de Cuisine at Dinette. He's involved in initiatives that promote local gastronomy (the Żar Wino festival) and takes part in tasting dinners — for example at Krupa Art Foundation.&lt;/p>
 &lt;p>His cooking is above all about seasonality, care for ingredient quality, and working with local suppliers. He pairs Polish flavours with Mediterranean cuisine and isn't afraid of French classics either. &lt;p>Coure — Albert Ventura's restaurant in the Sant Gervasi district. No Michelin star, by Ventura's own choice — when the inspectors put it on the conditional shortlist, he renovated everything except what they were waiting for and walked away from the process publicly. A kitchen where nothing is approximate. Every plate goes out exactly as the chef planned, or it doesn't go out at all. Tomek arrived young, without much experience, and the place shaped him. Not just the technique, though he learned that too. The discipline. The respect for service. No industrial yeasts, no acidity regulators, no coloring agents, no artificial tannins, no excessive sulfites. &lt;p>Most of our wines come from small producers — people Dominika knows personally or discovered at trade fairs and harvests. Some arrive through Geek Wines (her own import company), others through importers she trusts.&lt;/p>
&lt;p>We don't have a fixed supplier list. We have a fixed standard: wines made by hand, from organic vineyards, without unnecessary chemistry. Most are natural wines — but not all, and not because "natural" sounds good.
